[Tony's Creation]Crispy Salmon cubes in fresh tomato sauce

I used to use ketchup to make tomato sauce.  However, ketchup actually contains a lot of other ingredients like vinegar, sugar which will destroy the natural taste of tomato.

To make a good tomato sauce, a good and fresh tomato is a must.  Simmer the tomato for 10-15 minutes so that the flavor of the tomato can be fully released.  Fresh tomato sauce tastes really good even without adding any additional seasoning.

If you have a hard time to get a good salmon fillet, you can replace it with any frozen fish fillet.   

.: Ingredients :.

Group A
1- 400g of Salmon fillet, cut into small cubes
2- 1/2 onion, peeled, cut into pieces
3- 2 tbsp of minced green onion
4- 200g of medium tomato, cut into pieces
5- 1 tbsp of minced garlic
6- 1 tbsp fresh minced coriander
7- 3 tbsp of flour or corn starch
Group B
1- 1 tsp of black pepper flake
2- 1/2  tsp of salt

.: Sauce mixture :.
[just for reference only]

1- 1/3 tsp of salt
2- 100ml of hot water
3- 10g of slab sugar or 3 tbsp of raw brown sugar

.: Steps :.

Marinade the salmon with Group B ingredient for 15 minutes.  Coat both side of the salmon with flour.  Heat the pan with 1 tbsp of oil over medium-high heat.  Pan-fry the fish until all sides are light brown.  Turn the heat to medium.  Continue pan-fry the fish until golden.  Dish it up and put it aside

Heat the non-sticky pan with 1 tbsp of oil over medium-high heat.  Add in the garlic, green onion and onion with 1/3 tsp of salt , and stir-fry until soft (about 2 minutes).  Add in the coriander, tomato with 1/3 tsp of sugar, and stir-fry the ingredients until tomato is soft (about 2 minutes).   

3-  Add in the sauce mixture and bring it to boil.  Turn the heat to medium.  Cover and simmer for 10 minutes.  Adjust the taste accordingly.  Add in the salmon cubes and mix it well.  Dish it up and serve it in hot.

.: Tips :.

1- Do not turn the fish before one side is brown.
2- Do not overcook the fish.  It is recommended to cook it to 90% done.
3- Adjust the taste at the end.  Add salt to make it sour.  Add sugar to make it sweet.  Add corn starch mixture to thicken the sauce if needed.
