Fried rice is fun to make.  There are many different methods available.  The method that I used is not necessary the best, nor the tradition one.  It is just a reference for you.  If you like to use other method, feel free to use it.

For most of the Asian, they believe using a rice that cooked a day before provide the best result.  It is because the cooked rice after a day is usually dry.  But the true is, you can also make the fresh rice to obtain the same result.  Just right before cooking the rice, take away 2-3 tbsp of water.  When it is done, the rice will be dry as well.
 
Fried rice need to be dry to keep the tender texture.  If you fry the rice for too long, or if the ingredients is too wet then it will overcook the rice.  The rice will become too soft and it won't taste good.  So make it fast and cook it over high heat .     
XO sauce in the ingredient list is a specail sauce for Chinese.  You can easily find it in most of the Asian supermarket.  It is super good to serve with noodle or fried rice.  Here is the wikipedia explanation:

.: Ingredients :.

Group A
1- 4 regular bowl of cooked rice
2- 1/2 onion, peeled, diced
3- 1 tbsp of minced green onion
4- 1/2 of Green/Red bell pepper, diced
5- 4 hotdog sausage, diced
6- 2 medium size of egg, blended
7- 4 slices of ginger, shredded

Group B
1- 3 tbsp of instant Chinese pickled olive
2- 2 tbsp of XO sauce

.: Steps :.


1- 
Let the rice to cool down.  Add in the blended egg with 1/2 tsp of salt.  Gently mix the ingredients together.

Heat the non-sticky pan with 1/2 tbsp of oil over high heat. Add in the 1 tbsp of green onion and onion with 1/3 tsp of salt and stir-fry until soft (about 2 minutes).  Add in the sausage, green onion, red/green peppers.  Mix it well and stir-fry all the ingredients for another 3-4 minutes or until the sausage is fully cooked.  Drain the ingredient in a sieve over a bowl and put it aside.  

3-  Clean the pan and dry it well.  Heat the pan with 2 tbsp of oil over high heat.  Once the pan is heated.  Add in the shredded ginger and pan-fry for 10-20 seconds.  Add in the rice mixture.  Pan-fry once side for 1 minutes.  Constantly stir fry the rice until the egg is solid.


4- 
Add in the cooked ingredients from step 2 and mix it well.  Turn off the heat.  Add in the pickled olive and xo sauce.  Mix it well and dish it up.  Serve it in hot. 

.: Tips :.

1- Drain well the ingredient before add into the fried rice or it will affect the rice texture.
2- Do not press the rice while cooking or it will also affect the rice texture.
3- Brown one side of the rice will make the fried rice taste better.
