[Tony's Creation]Chinese Tea flavored soft boiled egg

I love tea flavored egg.  But I don't like the hard boiled egg.  The egg yolk is usually overcooked.  The texture is like the mud.  It is hard to swallow

Therefore, in this Easter holiday, I am going to share with you my new way to make tea flavored egg.  I am using a traditional ingredient but with soft boiled egg.  I am sure you will love it.

Soft boiled egg requires some tips to make it perfect.  I share my trick in the video below.  If you follow my instruction, perfect soft boiled egg is piece of cake.

.: Ingredients :.

1- 10 eggs, about 55-60g each
Group A
2- 2 cup of hot water, about 16 oz
3- 4 orange pekoe or black tea bags
(you can replace orange pekoe by any other black tea)
Group B
4- 1 cup of cold water, about 8 oz
5- 1 Anise
6- 1 cinnamon
7- 30g of rock sugar
8- 2 tsp of dark soy sauce
9- 4 tbsp of light soy sauce
10- 1 tsp of salt

.: Steps :.

1- Follow this video http://youtu.be/Y9jfifb47tk?hd=1.  Cook 10 eggs to be soft boiled egg

2- Mix Group A ingredients together. Simmer for 15 minutes.  Meanwhile, Mix all Group B ingredients and bring it to boil.  Turn of the heat.  Simmer and cover for 15 minutes.  Mix Group A into Group B.  Let the mixture to cool down.

Crack lightly the egg shell for each eggs.  Put the egg into the zip lock bag.  Pour in the sauce mixture.  Seal the bag like the image above.  Soak the both side of the eggs for 5 hours.  Bath the egg into the hot black tea before serve for about 3 minutes.  Enjoy it :D

.: Tips :.

1- Tea flavor will be release only when the food is hot.  It is why I recommend to bath the egg into the hot tea before serve.
2- Zip lock bag can reduce the amount of sauce mixture.  However, it can only soak one side of the egg.  Therefore, after 5 hours, flip it over to the other side to soak the other side of the eggs.
3- Using the soft boiled egg method mentioned in the video will keep the egg yolk soft even it is totally cooked.
