[Tony's Creation]Stir-fry minced pork with eggplants in miso sauce

[Prep: 15 minutes | Cook: 20 minutes | Serves: 4 people| Calories: 350 per serving (Estimated) ]

Miso is a common ingredients like oyster sauce.  In Japan, there are many different type of miso.  The most common types that you can find in the supermarket are red and white miso paste.  White miso paste taste lighter.  It is suitable to make miso soup.  Red miso paste has richest flavor.  It is used more like the sauce. 
This dish taste like miso soup.  If you like miso soup, then you will love this dish.  It is really good to eat it along with a bowl of rice. 

.: Ingredients :.

1- 400g of lean ground pork
2- 1/2 onion, peeled, diced
3- Half of red and green bell pepper, core removed, diced
4- 1 tbsp of minced garlic
5- 2 eggplants, cut into large pieces
6- 1 tbsp of diced green onion
7- 3 tbsp red miso paste
8- 1/4 cup of hot water
9- 1 tbsp of corn starch + 1 tbsp of cold water

.: Sauce mixture :.

1- 1/2 tbsp Japanese Soya
2- 1/2 cup of hot water
3- 1/2  tsp of sugar
4- 1 tsp of benito powder or chicken powder 

.: Steps :.

1- Marinade the pork with "Tony marinade method" (but do not add dark soy sauce) for 15 minutes.  
Meanwhile, blanch the tofu for 3 minutes.  Drain it well and dish it up.  Put it aside.

2- Heat the pan with 1/2 tbsp of oil over high heat.  Stir-fry the pork until fully cookedDrain it in a sieve over a bowl and set it aside.

3- Clean and dry the pan.  Heat the pan with 1/2 tsp of oil over medium high heat.  Add in the garlic, onion, green/red peppers, and eggplants with 1/3 tsp of salt.  Stir fry all the ingredients until the onion is soft (about 2 minutes).  Add in the sauce mixture and bring it to boil.  Turn the heat the medium.  Cover and simmer for 5 minutes   

4- Mix the miso with hot water in a bowl until smooth.  Add in the pork, miso mixture and the corn starch mixture until the sauce is thicken.  Dish it up.  Top it with green onion and serve it in hot. 

.: Tips :.

1- It is better to dissolve the miso paste in a hot water in advance then cooking it directly.
2- Simmer the eggplants with the sauce mixture is way better than deep fried it.
3- Add more water in the sauce mixture if you prefer to have more sauce.
