[Tony's Creation]Seafood and winter melon with salty egg

.: Ingredients :.
1- Winter Melon, peeled off, core removed, cut into pieces, 450g
2- Shrimps, shell removed, 300g
3- 2-3 Dried scallop, soaked, shredded

4- Imitated crab meat, 200g
5- 3 Salty Preserved egg

6- Unsalted butter, 3 tbsp
7- Minced garlic, 3 tbsp
8- 2 Ginger slices
9- Chicken Broth, 3/4 cup

.: Seasoning :.
1- Salt, 1/2 tsp
2- White pepper, 1/2 tsp
3- Corn starch, 1/2 tbsp

.: Directions :.  

Step 1:
Remove the vein from the shrimps.  Coat it with 2 tbsp of corn starch.  Rinse it well.  Dry it and marinade it with the seasoning for 15 minutes.  Add the chicken broth in a sauce pan and bring it to boil.  Add in the ginger slices and winter melon.  Cover and simmer for 10 minutes.  Put the melon in a sieve over a bowl and put it aside.  While cooking the melon, separate the salty egg yolk and white into 2 containers.  Cover the containers with wet paper towel.  Cook them in microwave for 2-3 minutes.  Shred the cooked egg white with a fork.  Add in the butter into the cooked egg yolk.  Mash the egg yolk mixture until it is smooth.  Put it aside.

Step 2:

Heat the pan with 1 tbsp of oil over medium high heat. Stir-fry the shrimps until it turns hard and no longer transparent (about 3-4 minutes) .  Put the shrimps in a sieve over a bowl.  Put it aside.

Step 3:
Clean the pan and dry it well.  Heat it again with 1 tbsp of oil over medium high heat.  Add in the minced garlic and dried scallop.  Stir-fry until the garlic is lightly brown.  Add in the shrimps, crab meats, salty egg white and 1 tbsp of hot water (or cooking wine).  Mix it well and continue stir-frying for 2 minutes.

Step 4:

Add in the winter melon and mix it well (stir-fry for another 2 minutes).  Add in the salty egg yolk mixture and mix it well.  Dish it up and serve it hot. 

.: Cook's notes :.
1- Chicken broth using in this recipe is the one that you can serve it directly without adding any water.
2- Egg yolk mixture is better to mix in at the end to ensure the smooth texture
3- Shrimps will be cleaner by coating the shrimps with the corn starch before rinsing it.
