[Tony's Creation]Fried noodle with pork in soy sauce

Chinese egg noodles - wheat flour noodles with egg added. Fresh egg noodles (preferably about 1/4-inch thick) are best for lo mein, while either fresh or dried can be used to make chow mein. Either way, the noodles need to be softened in boiling water before cooking. Dried noodles are parboiled in boiling water for 5 to 6 minutes before using, while fresh egg noodles only need to be boiled for 2 to 3 minutes. The exact amount of cooking time will depend on the thickness of the noodles, so be sure to follow the package instructions if available. But whether you're working with fresh or dried noodles, the goal is to boil them until they are just cooked but not too soft (what the Italian's call "al dente," or "cooked to the tooth").

.: 材料 Ingredients :. 
1- Chinese Egg Fried noodle, 400g
2- Bean sprouts, 100g
3- bell pepper (any color, cored, sliced
4- Minced garlic, 1 tbsp
5- Shallot, peeled, sliced
6- Roasted sesame seeds, 1 tbsp 

 
.: 汁料 Sauce mixture :.
1- Sugar, 1/2 tsp
2- Oyster sauce, 1 tbsp
3- Sesame oil, 1/2 tsp
4- Dark soy sauce, 2 tbsp
5- chicken powder, 1/2 tsp, optional


.: 做法 Directions :.
Step 1:

Marinade the pork with "Tony's Marinade Method".  Cook the noodle in a pot with boiling water over high heat until it is 80% cooked (check the package instruction for the exact cooking time)
.  Add in the bean sprout and cook for 30 second.  Drain all ingredients and put it aside.

Step 2:
Heat the pan with 1/2 tbsp of oil over high heat. Add in the garlic and shallot and pan-fry them until the garlic is light brown.  Add in and Stir-fry the pork until fully cooked.   Add in and stir-fry the bell pepper for 2 minutes.  Drain all ingredients in a sieve over a bowl and set it aside

Step 3:
 
Clean and dry the pan.  Heat the pan with 2 tbsp of oil over high heat.  Add in and pan-fry the noodle until each side is golden (about 3-5 minutes each side).  Add in the cooked ingredients (bean sprout, bell pepper, pork) and mix them well.  Combine the sauce mixture well.  Add in the sauce mixture and mix it with the ingredients quickly.  Top with the sesame seeds.  Dish it up and serve it hot.
.: 小貼士 Cook's notes :.
1- It will easier to handle if we cut the noodle into shorter length by a scissor.
2- It will taste better if we stir-fry the noodle over high heat so that it will be dry and crispy

3- It will be easier to stir-fry the noodle with fork or chopsticks
