1- 1 lbs of Dace fish paste
2- 1 tsp of chicken powder or salt
3- 1 tsp of white pepper flake
4- Headless & Peeled shrimps, veined, 200g
5- Corn starch, 4 tbsp
6- Pineapple slices, diced, 5 slices

Mash the shrimps into paste. Mix it with the Dace fish paste, chick powder or salt, and white pepper for 10 minutes. Divide the mixture into 20 fish balls. Insert the diced pineapple into each fish balls and seal the hole.
Coat evenly each fish balls with the corn starch. Heat the pan with 2 tbsp of oil over medium high heat. When the pan is hot, add in the fish balls. Pan-fry until it is brown (about 6-8 minutes). Dish it up and serve it hot.
.: 小貼士 Cook's notes :.
1- It is recommended to clean the shrimps with the corn starch.
2- Make sure you dry the shrimps well before mashing it.
3- Keep the hands wet will make it easier to handle the mixture.
4- It is easier to pan-fry the mixture with non-sticky pan. It also uses less oil too.
