[Tony's Creation]Creme Brulee

.: 材料 Ingredients :.
Group A
1- 2 egg yolk
2- White sugar, 2 tbsp
3-
2%milk + 35% cream, 125ml each
4- Vanilla stick, 1/2 stick
*
Or replace it with Vanilla essence, 1/2 tsp

Group B
1-
White sugar, 2 tbsp
2- Water 1 tbsp
 .: 做法 Directions :.
Step 1: 


雲Slice the vanilla stick lengthwise,  Then scrape the seed from interior of the vanilla stick with the edge of a knife.  Put the seeds, stick, milk, cream into a saucepan.  Heat the mixture with medium heat until the mixture is warm.  Set it aside and let it cool down.
(.: Note: Don't bring the mixture to boil or it won't taste great.  The mixture should remain about 60-70 Celsius)

Step 2:

Add the sugar and the egg yolk in a mixture bowl.  Whisk the egg yolk until the mixture turns from dark yellow to light yellow about (3-5 minutes)
(.: Note: It will be easier if whisk the mixture with electronic mixer)

Step 3:

Pour the milk mixture into the egg mixture and mix them well.  Then filter the mixture through a sieve. 
(.: Note: It will be smooth if filter the mixture through a sieve.  Discard the vanilla stick but keep the seeds)

Step 4:

Preheat the oven with 175 Celsius (350F).   Place the ramekins on the baking tray.  Add the hot water until it cover half of the ramekins.  Pour the mixture gently into the ramekin about 80% full.  Bake it in the oven over 35 minutes.  Then remove the ramekin from baking tray and let it cool down.  Refrigerate for at least 3 hours.  When ready to serve, spread evenly the sugar (group B ingredient) on the custard.  Burn the sugar with torch until the sugar is golden.  Serve immediately.
** If you have no torch, you can put the group b ingredient into a pan.  Heat it over medium heat until the sugar is caramelized.  Spread evenly the caramel on the custard.
(.: Note: Cooking time will be shorten if the ramekin is not deepIf the custard is solid and is shaking when remove the ramekin from baking tray,  It is well cooked)
