[Tony's Creation]Fish fillet with white sweet and sour sauce

.: 材料 Ingredients :.
Group A
1- Basa Fillet, cut into piece, 500g
2- Salt, 1 tsp
3- White pepper, 1/2 tsp
4- Cinnamon powder, 1/2 tsp
Group B
1- Half of bell pepper(any color), cored, cut into pieces
2- Corn starch, 1/2 cup)
3- 1/2 of medium size onion, peeled, diced
4- Medium apple, peeled, cored, diced
5- Custard powder 1 tbsp + cold water 2 tbsp

.: 汁料 Sauce mixture :.
1- Mayonnaise, 3 tbsp
2- Sugar, 1 tbsp
3- Lemon juice, 1 tbsp
4- Hot water, 100ml

.: 做法 Directions :.
Step 1:

Seasoning the fish fillet with Group A ingredients for 15 minutes.  Heat the non-sticky pan with 2 tbsp of oil over medium heat.  Coat each piece of fish with a thin layer of corn starch.  Pan-fry the fish until one side is golden (about 2-3 minutes).  Turn it over and pan-fry until other side is golden as well.  Put it on a baking rack over a paper towel.  Put it aside.
(.: Note: Do not flip the fish too often while pan-frying it.  Turn it to other side only if one side is brown)

Step 2:

Heat the pan with 1/2 tbsp of oil over medium heat.  Stir fry the onion with 1/3 tsp of salt until soft.  Add in the bell pepper and stir fry for 1-2 minutes
(.: Note: Salt will quickly soften the onion.  It will also make the onion taste sweet after cooked)
Step 3:

Add in the sauce mixture.  Mix it well and bring it to boil.  Add in the apple and the fish.  Add the custard mixture and stir until the sauce is thickened.  Dish it up and serve it hot.
(.: Note: Custard mixture is like the corn starch mixture.  Add small quantity and check the sauce thickeness before continue adding the remaining mixture.  Once the sauce is thickened, stop adding the remaining mixture. )
